On a device with Apple Intelligence the notes are written there too; otherwise, when you are signed in and allow cloud processing, only the transcript text goes to Pithflow to write them — never the audio.
The one time you need a connection: the first recording in a language downloads that language's transcription pack, and the first speaker-separated recording downloads its models. After that, Notes works without a connection.

A cloud service wins when a recording switches languages mid-sentence, because the phone's transcriber works in one language at a time. Pithflow keeps a cloud mode for exactly that — it is part of Pro, it sends the audio to Pithflow with your permission, and the page tells you so before you tap Record.
It is not on the App Store yet: the iPhone app is in testing, and this page will carry the link the day it ships. It does not record phone calls — iOS does not allow any app to. It transcribes one language per recording on the device; mixed-language recordings are the Pro cloud mode. There is no Android version.
Yes, once the language you record in has been downloaded. The first recording in a language fetches its transcription pack (and the first speaker-separated recording fetches the separation models); after that, recording, transcription, speakers and on-device notes all work with the connection off. Only the optional cloud notes and the Pro cloud transcription mode need a connection.
No. Notes works without one, including the paid plans — the purchase is tied to your Apple account. A Pithflow account is for syncing to your other devices, for Pro dictation, and for linking a purchase to your plan.

Not by Notes. Recording, transcription, speaker separation and the notes happen on the phone, and the audio file stays there. Two things do use the cloud, both with your permission: Pro dictation, and the Pro cloud transcription mode for mixed-language recordings. If your device cannot write notes on its own and you are signed in with cloud processing allowed, the transcript text — never the audio — is sent to write them.
Any iPhone or iPad on iOS 26 or iPadOS 26 or later. On-device notes need a device with Apple Intelligence; on the others, notes come from Pithflow's cloud when you are signed in, or as key sentences picked on the device.
You pick one language per recording from the ones your device offers — English and Spanish among them. Nothing is detected automatically on the device. For a recording that switches between languages, use the Pro cloud mode.
